While they make plenty of Sauvignon Blanc, their focus is not on producing easy SB, but on producing wines that transparently show where they are from. While 80% of their production is white wine the do produce this beautiful blend of Pinot and Gamay that is juicy and fresh. It has rich that are complemented by floral and earthy undertones. There’s a bit of spice inflection from the terroir that sits on a well of deep minerality.

Established on the outskirts of Portland in the late 1970’s, the winery began as and remains a family endeavor, with two generations of the Gross family guiding Cooper Mountain. Since 2004 winemaker Gilles de Domingo has been overseeing all winemaking.
This wine has notes juicy red fruit, dark berries, and a bit of earthiness.

This wine comes from their Montagne de Cras plot in Nantoux which is at 382 metres altitude and the name of the Montagne de Cras lieu-dit on the label. The pebbly slope has all kinds of life and even a few rare corm trees. The wine itself is aged on the lees in barrique for a year with 25% new oak before resting in stainless. The resulting wine is clean, smooth and full of citrus and honeysuckle with a well-integrated, judicious note of oak. -

There’s an incredible energy to their wines and we can’t get enough of them. They are so incredibly drinkable for the price point—juicy, mineral-tinged, and complex all without breaking the bank. While many Cabernet Francs come with a little bit of bell pepper, or pyrazines for the science lovers, Thibault’s are pure fruit and chalk from his tuffeau soils.
