In the 1980s the family abandoned their traditional stone Tahona mill for a more efficient roller mill, but recently they decided to revive and reinstall the tahona (+a mechanically driven arm) and use small copper alembique still to produce this excellent tequila. It’s rich and complex, balancing peppercorn, cooked agave, and fresh earth punctuated with waves of tropical fruits. Absolutely a benchmark among lowlands (or valles) tequilas.

Domaine Boris Champy Hautes Cotes du Beaune Montagne 382 2020
$70.00Add to cartThe site for Boris Champy was developed by Didier Montchovet, an early adopters of biodynamics in Burgundy. Today the estate wines are all labeled under Boris Champy and are fully certified.
This wine comes from their Montagne de Cras plot in Nantoux which is at 382 metres altitude and the name of the Montagne de Cras lieu-dit on the label. The pebbly slope has all kinds of life and even a few rare corm trees. The wine itself is aged on the lees in barrique for a year with 25% new oak before resting in stainless. The resulting wine is clean, smooth and full of citrus and honeysuckle with a well-integrated, judicious note of oak. -
Domaine Faiveley Mercurey Vielles Vignes 2022

They take their experience and apply it to make terroir driven expressions of all their various holdings. Mercurey is on village on the Cote Chalonnaise which takes its name from the god Mercury (God of trade). The wine is concentrated and structured, aromatic, and full of deep red berries and a bit of vanilla.

La Croix Ducru-Beaucaillou Saint Julien 2019
$90.00Add to cartThis is the Medoc’s smallest village, and while it has no first growths it has the highest amount of classified estates in the Medoc. The gravels are less deep that Pauillac so are less hefty but still grace. This expression is from one of the oldest estates and has all the delightful notes of the region: cedar, violets, graphite and will definitely benefit from some aging, so this 2015 is just entering its ideal drinking window.
