The Rosales family who produces Cascahuin has been working as tequileros since 1902. In the 1980s the family abandoned their traditional stone Tahona mill for a more efficient roller mill, but recently they decided to revive and reinstall the tahona (+a mechanically driven arm) and use small copper alembique still to produce this excellent tequila. It’s rich and complex, balancing peppercorn, cooked agave, and fresh earth punctuated with waves of tropical fruits. Absolutely a benchmark among lowlands (or valles) tequilas.
