Borachio Resistance is Futile 2022
$39.00Add to cartIf you’re familiar with Star Trek, at least more than I am, then the name for this cuvée may intrigue you. In this open-ended query about the growing predilection for orange wines, Mark and Alicia ask us to consider the constitution of a good orange wine. The composition of this particular wine is almost equal parts Pinot Grigio (41%), Sauvignon Blanc (41%) and Chardonnay (18%). All grapes were de-stemmed and sealed to macerate and integrate for a couple of weeks. Residual grape matter is ushered into the bottle to add dimension, alluding to the holistic approach of the winemaker. A floral bouquet of jasmine and wildflowers is registered on the nose. On the palate, this wine is reminiscent of lemon curd and peach iced tea, with chewy tannins and a smooth, lasting finish. Decanting is encouraged by the winemakers, so if you’re not pressed for time, it might behoove you to do so. Serve chilled and ponder whether resistance truly is futile.

A blend of Sauvignon Blanc (78%) and Cabernet Franc (22%) from vines in Blewitt Springs in McLaren Vale and Forreston in the Adelaide Hills, the grapes are directly pressed before fermenting. On the palate, the brisk acid from the Sauvignon Blanc is potent yet forgiving, with a tropical fruit medley that melds wonderfully with the baking spices and tart cherry of the Cabernet Franc. This wine’s effervescence and garnet hue make it a youthful choice to accompany your holiday gatherings.
