Tasting Notes: Organic, White Flowers, Dried Apricot, Lemon Curd, Honeysuckle, Light Tannins,
A continuation of George’s traditional approach to honoring their ancient legacy, this cuvée is made with 100% Kisi, a rare white grape indigenous to the region, produced from 45-year-old vines grown on Cinnamonic soil. After harvesting, the grapes are destemmed and fermented with 5% skin contact for five days before being aged in Qvevri for three months. The finished wine is unfiltered, unfined, and with zero sulfur added. This Kisi expression can be heralded as a cornerstone example of zero-zero winemaking. First impressions of this wine on the nose unveil a delicate bouquet of florals. On the palate, however, is when we catch a glimpse (or taste, rather) of the complexity of this wine. It oscillates between dried apricot, tart lemon curd, and honeysuckle nectar. This wine is finely balanced, with a gentle, coaxing acidity, smooth tannins, and a finish that invites a clearer understanding of this wine’s nod to the past. - Ella
