Surrounded by oak and pine forests and bordered by the Issole, Domaine Gavoty is a polycultural farm encompassing over 200 acres, and the family has worked the land without synthetic chemicals for decades, recently obtaining organic certification. The rosés they produce is the antithesis of modern Provençal rosé that is made to glug down as fast as possible. The “Récital” delivers a beautiful color, salinity, and bright fruits but with notable texture and panache. A standout from a producer who does things their own way.
