A bit of salinity and smoke sit on top of a creamy complex malt full of orange and apple fruit with darker baking spices and burnt honey. It just goes to show that while sherry cask finishes (or other even more exotic barrel combinations) can create fascinating single malt, it’s hard to beat a classically profiled dram.

It’s a fascinating bottle that opens with a sweet nose that hints at the Cenizo funk. The palate is creamy chocolate, but still somehow a bit meaty (a combination of sweet and salty). Really a delightful mezcal.

It may be from Guffens that he picked up some of his iconoclastic ways like hand picking his sourced fruit and fermenting the wines spontaneously. The Montmains fruit comes from all three subclimates of Montmains: Butteaux, Forets, and Montmains. He gets fruit from a half a hectare and this wine tends to be the most austere of the three as there is very little topsoil and the vines grow right on the bedrock.
