A good pick for the natural / minimal intervention lovers.Since 2003 Steve Selin has worked his fields outside of Ithaca, New York (and a few on neighboring properties) organically to create multiple expressions of cider from heirloom varieties.This dry sparkling pet-nat cider is a blend of fanciful apples (Calville Blanc, Goldrush, Dabinett, Sam Young, Ashmead’s Kernel, Porters Perfection) and time. It underwent a wild fermentation, is unfined and unfiltered, and has no added sulfites. The result is a delicious blend of bittersweet citrus, bubbles, and a light funk.
