The wines from Sylvain Pataille are pure, concentrated fruit that fill your mouth with the essence of Pinot Noir. And yet, they're not oaky, and they aren't reductive. These wines are an understanding of terroir, old vines, and the touch of a genius.
Today, Sylvain Pataille makes some of the most sought after wines in Burgundy. Perhaps more astonishing is that he's based in Marsannay. And when he's not turning out some of the finest pinots we've come across, he asks you to consider Aligoté, not Chardonnay, as one of the great white grapes of the world. 
Sylvain, who's father was a bus driver in the town of Marsannay, began his winery with just one small plot of land in 1999. Today he farms 15 hectares from many tiny parcels of very old vine material, all organic and using biodynamic techniques. In addition to Pinot Noir and Aligoté, he also of course makes Chardonnay. 
For his vinifcations, he presses long and slow, uses only indigenous yeast, and adds very little sulfur, only at bottling. Aging takes between 15-18 months, but can be longer depending on the wine.

Pinot Noir planted 1950–1980 · blend of multiple terroirs across the village appellation · 30% whole-cluster, indigenous yeast; 18 months in older oak barrel. Fantastic, heady concentration, that does mellow with time in a decanter or glass but somehow the length gets longer on the finish.
