This Pinot Noir comes from a very small 0.11-hectare selection of vineyards in Beaux Bruns, with additional parcels from Derrière le Four and Les Chardannes, all planted in the 1980s on deep clay-limestone soils with a south-east exposure. The grapes are hand harvested and destemmed before undergoing a cold soak of several days, followed by fermentation with pump-overs and punch-downs over about three weeks.
After fermentation, the wine is moved to barrel for malolactic conversion, then racked once after malolactic and again before bottling. It is aged for 12 months, with two-thirds in barrel and one-third in stainless steel, before spending a final six months in stainless steel. The wine is bottled unfined and unfiltered.
