Weingut Heitlinger is the Kraichgau's great Pinot house. In these limestone-rich hills of northern Baden, where Cistercian monks recognized ideal growing conditions in the 12th century, more than 80 percent of the estate's vineyards are devoted to the Pinotfamily: Pinot Noir, Pinot Blanc, Pinot Gris, and Pinot Meunier, joined by Chardonnay and Auxerrois, thriving on soils of colored marllaid down 160 million years ago. Heitlinger calls its approach the living vineyard, encouraging flora and fauna to flourish among the vines through biodynamic practice, from estate compost to horn manure preparations. Every grape is harvested by hand,
sorted photo-optically, and moved by gravity in the cellar, where winemaker Claus Burmeister believes wine should evoke the true magic of a place.
