Golden Amber is a beautifully aged Junmai Koshu from Hayashi Honten, a family-run brewery located on the southern edge of Gifu Prefecture in central Japan. Now led by fifth-generation owner Eriko Hayashi, the brewery is particularly fascinating for its ability to move effortlessly between traditional methods such as Yamahai, pristine modern Daiginjo, and the deep, contemplative world of aged Koshu.
And Golden Amber certainly lives up to its name. Aged for an impressive 12 years—including four years resting in ex-whisky oak barrels—this is sake showing a completely different side of itself.
Deep amber in color, the nose immediately draws you in with layers of caramel, toasted almond and warm oak. The palate is silky, rich and wonderfully complex, unfolding with notes of vanilla, caramel, baking spice and a gentle smokiness that feels almost whisky-like. Yet despite all that depth and intensity, it remains remarkably balanced and elegant.
This is not your everyday sake—and that’s exactly the point. Golden Amber is a beautiful example of just how far sake can evolve with time, patience and a little help from an old whisky barrel.
