While Assyrtiko dominates the Greek landscape of available white wines there are oodles of other varietals that can be quite compelling. The Cretan wine grown near the center of the island in a region called Dafnes at approximately 350 meters.
The grape is Vidiano and though the region only allows the red Liatiko to be labeled DPO, the white might in fact be the more interesting grape with the most potential.
Douloufakis favors eastern facing slopes which get plenty of morning sun and mitigates the intense afternoon heat. This helps keep the alcohol in check. The grape has a bit more body than your typical sauvignon blanc. The flavors are a bit closer to subtle yellow pitted fruits perhaps similar to albarino. The texture though is much more interesting like semillon or Friulian malvasia. The wines are age in a mix of accacia and oak barrels which lend a mesmerizing complexity to this wine.
