Benoit Dehu Champagne La Rue des Noyers Brut Nature

This single-vineyard, single-vintage, single-variety Champagne gets its name from the parcel of land that Benoit Dehu farms biodynamically (and partially plowed by a horse named Violette.) It was once bordered by walnut trees (Noyers), and represents his vision of natural viticulture and a deeper understanding of Pinot Meunier. This wine ages for 11 months sur lie in oak barrels, many of which are made from trees from the village's forest. Combine that with no dosage, and you get a Champagne that rings with a vibrant intensity that's hard to match.
