A Flavor Profile Driven by Terroir and Clones

The renowned Talbott Vineyards crafts estate-grown Chardonnay and Pinot Noir inspired by the traditions of Burgundy. For more than three decades, Talbott Vineyards wines have consistently garnered praise from wine critics and enthusiasts alike, including receiving a rare 100-point score in a Wine Spectator retrospective tasting for their 1990 Sleepy Hollow Chardonnay.  With two estate vineyards located in Monterey County, California, Talbott offers a portfolio of exceptional wines to enjoy.

Three distinct parcels, all trellised to vertical shoot positioning, tell a story of diversity across the singular estate. Planted to a mix of Chardonnay and Pinot Noir clones, subtle differences, whether in aromatic profile, vineyard resilience, or cluster size, allow diverse expressions within the variety and provide a range of choices for crafting a richly layered, single varietal wine. They develop their planting strategies using soil mapping to allow the vineyard team to match rootstocks to the terrain and align with the winemaking team to select compatible clones. This micro-targeted approach to farming can transform a single block into a mosaic of multiple rootstocks and clone combinations adapted to slope, aspect, and soil, among other inputs.

The grapes are pressed in small lots to preserve the character of each unique vineyard area. Their Chardonnay clones are co-fermented to add depth of fruit intensity and character, allowing them to create a diverse range of wine styles. All wines are aged in either stainless steel tanks that help enhance the fruit flavors, oak barrels that help build texture and richer aromatics, or both. The choice of barrels binds them together into a seamless combination of flavors and textures.
