The first stage of whiskey production involves the creation of a beer which is then distilled in a copper pot still. Different proportions of unmalted and malted barley are milled into a coarse flour before being sent forward for mashing, where hot water is added and mixed. The mash is drained and the liquid extract sent to fermentation, where liquid yeast is added. Then, the resulting beer is triple distilled in a copper pot still before being filled into oak casks for maturation. Their whiskey for Redbreast 12 is aged for a minimum of 12 years.
