100-Year-Old Vines, Centuries-Long Tradition

Didier Gimonnet directs this superb estate, located in the Premier Cru of Cuis. With 29.4 hectares of holdings in Grand and Premier Cru villages, predominantly in the Côte des Blancs, Didier’s family has been growing grapes in Champagne since 1750. It was Pierre Gimonnet, Didier’s grandfather, who started bottling estate Champagnes in 1935.

The estate stands out for its high percentage of old vines: 70% are over 30 years old, 40% over 40, and some exceed 100 years in the Grand Cru village of Cramant. Winemaking is focused on preserving the original qualities of each parcel. Grapes are hand-harvested and pressed within six hours, with fermentation beginning within 36 hours to protect aromatic purity. Single-parcel vinification in stainless-steel vats ensures respect for each plot, and aging occurs on fine lees without stirring.

Sustainable viticulture is central to Gimonnet & Fils, with limited herbicide use, no fertilizers, and careful protection of vineyard biodiversity. Non-vintage wines are built on assemblage, blending different years to create a “multi-vintage” style. Reserve wines from previous harvests enrich the current year’s wine, providing a consistent flavor profile and acting as guides to educate and elevate each vintage.
