Passion, perseverance, and dedication are among the values that Mattia Montanari, CEO of Opera02, has inherited from his family and has been able to materialize in this startup day after day, year after year. With the beginning of the project in 2002, from which the name OPERA02 originates, the first vines of Grasparossa were planted, one of the oldest indigenous grape varieties in the world. The name “Grasparossa” derives from its peculiarity: the reddish hues that the leaf takes on in the last days of September and throughout the autumn period. In the following years, other grape varieties such as Trebbiano di Modena, whose grapes are the basis of Traditional Balsamic Vinegar of Modena, and Malbo Gentile were added. Each of these vineyards is cultivated organically.
