Micro Cuvees Reflecting the Character of Burgundy

Founded in 1816, it is one of the oldest and smallest wineries in the heart of Beaune, crafting elegant wines that truly reflect the character and history of Burgundy.  Located in the heart of Beaune, its historic cellars date back to the 12th century and were once part of the Collégiale Notre-Dame, serving the church and its cardinals. Today, Jaffelin is the only winery still vinifying in Beaune’s medieval center. All wines are crafted in micro-cuvées, allowing precise and careful winemaking. 

The grapes arrive at the winery in small crates at harvest time. They are carefully sorted, destemmed, and transferred into wooden vats by gravity in order to preserve all their properties. They use a vertical press that gives them a clear juice with no bitterness. Pressing is slow and carried out only once.

Winemaker Marinette Garnier, trained in Dijon with experience at top Burgundy domaines, focuses on native yeasts, gentle extraction and temperature control to produce balanced, transparent wines that truly reflect their terroir. Aging takes place over a period of 10-18 months deep within their serene medieval cellars, preserving the harmony between tradition and modern precision. Jaffelin continues to earn recognition worldwide for its authenticity and quality despite its small size.
