Tequila Rooted in Honoring Mexican Tradition
In 1996, founder Cirilo began building Espolòn’s home – Casa San Nicolas in Los Altos de Jalisco. Situated at a high altitude, Casa San Nicolas became a workshop where art and science exist in harmony, and where inspiration is easy to come by. With deep knowledge of the ins and outs of making Tequila, Cirilo knew how to keep the best parts of longstanding traditions while bringing to life his unique, revolutionary vision for Espolòn. Soon, he was producing a Tequila that embodies the spirit of Mexico – a rebel spirit full of music, color, pride and camaraderie.
Cirilo named it Espolòn, Spanish for “spur,” to honor his single-minded commitment to real Tequila and real Mexican craft – to spur on, ever forward, serenaded by the spirits of the past. Espolòn is an exceptional Tequila for everyone. It salutes the person who always enjoys a good Tequila at the table, who inspires transformation, and who pours out their passion for all to enjoy.
Espolòn Tequila is made from only hand harvested 100% blue weber agave. Respecting traditional cooking techniques while leveraging his engineering background, Cirilo created custom stainless-steel autoclaves to cook the piñas to ensure a delicate extraction and a balance of fresh and cooked agave character. In order to extract the remaining sugar from the fibrous agave pulp, or bagasse, the cooked piñas are pressed by passing through roller mills before being fermented. After, it is blended and aged in #2 charred American oak barrels
