The first traces of the Servin family in Chablis can be found in 1654, with more than seven generations of winemakers, ploughmen, coopers behind them; always devoted to the vineyard. Today, the Domaine is recognized as one of the largest owner- grower domain of Chablis with 37 hectares on some of the most famous slopes of Chablis, producing the whole range of appellations of Chablis. François Servin, along with his Australian associate Mark Cameron, direct the operations of this 30 Ha domaine.
He has resumed the practices of hand harvesting (all the Grand Cru are now hand harvested; a large portion of the Premier Cru, too). For new planting, he is using uncloned Chardonnay and planting it at greater density. Soils are Kimmeridgian with alternating layers of limestone and clay marl, and the wines are fermented and aged in stainless steel and oak.
