Manual Vineyard Management in a Volnay Estate

From father to son through numerous generations, the Bouley family cultivates vineyards in Volnay. In the last century, from 1919, François Bouley managed the family estate. Christian succeeded him in 1948 and Jean-Marc created his own domaine in 1974, to which his father’s vineyards were added in 1984. In 2002, Thomas joined the domaine and took management in 2012.

The production is primarily red wine, amongst the villages of Volnay, Pommard and Beaune, with the exception of one vineyard producing white wines. This domaine uses neither weedkillers nor chemical fertilizers. The work of pruning, de-budding, and trellising is all done manually and keeps only 6 to 8 bunches of grapes per plant, all evenly spaced.

After harvest, the grapes are then sorted at the winery on a vibrating table. They combine traditional methods and modern technology to produce concentrated wines which are enjoyable while they are young and have good potential for aging. The fermentation takes between 2 and 3 weeks. Diverse decisions are made to adapt to the vintage and to each appellation. Ageing is done entirely in oak barrels and takes 15 to 20 months.
