Biodynamic Chenin Blanc from Vouvray
Domaine Huet is an iconic Vouvray producer and lauded for making some of the world’s most compelling white wines, including some of the longest-lived sweet wines. Since its founding in 1928 by Gaston Huet, this domain has been the standard-bearer for great, ageworthy Chenin Blanc. Today Domaine Huet is owned and operated by American brother-sister duo, Sarah & Hugo Hwang.
One of the earliest practitioners of biodynamics, Domaine Huet started farming biodynamically in 1990, and has been certified since 1993. The Vouvray vineyard is planted with a single grape variety, Chenin Blanc. While it is often used in sparkling wines in Vouvray, this grape variety also beautifully expresses the terroir and vintage in still wines. Known for their natural acidity and captivating aromatic profile, Chenin Blanc wines evolve slowly, acquiring finesse and subtlety.
Winemaking is carried out according to tradition. Each of the three crus is vinified separately. The whole bunches are poured into the presses without being crushed. Pressing is performed gently. In the cellars, after 24 hours of settling, the grape juice is divided into two parts: one is placed in tanks, the other in old barrels. The duration of this fermentation varies depending on the richness of the must and the activity of the indigenous yeasts. Each cuvée is aged for six months until bottling in April.
