Spanning an 84-acre vineyard, with 59 acres dedicated to producing the grand vin, Chateau Canon rests atop St-Emilion's prestigious limestone plateau. The vineyard predominantly comprises 70% Merlot and 30% Cabernet Franc, aptly described as the "meat and bones" of the wine by current winemaker Nicolas Audebert. With an average vine age of 30 years, this vineyard promises to evolve into a formidable source for one of St. Emilion's finest wines.
Saint-Emilion’s limestone plateau rises up on the right bank of the Dordogne. The porous rock of the plateau absorbs rainwater, providing the grapes with slow, even ripening. Thousands of clay cracks run through the limestone, holding water. The capillary nature of clay is what gives the wines their freshness.
The ground here is tilled by horse to feel the terroir whilst also being kind to the sensitive clay soils, avoiding compacting, aerating and improving the structure, and allowing rainwater to penetrate. During the winemaking process, pumping over by hand is preferred to enable contact with the raw material. The final blend incorporates every plot from the classified vineyard, designed to serve as a combination of potential. The wine has a unique personality – a soloist in every vintage.
