A Hidden Gem of an Estate Producing Classic Barolo
The Cavallotto family is the chief owner of the beautiful Bricco Boschis cru in the Castiglione Falletto district, where they have been growing Nebbiolo since 1929 and bottling their own wine since 1948. These richly structured wines place emphasis on elegance and longevity, attributable to excellent vineyards in the Bricco Boschis and Vignolo crus and traditional long maturation periods in large Slavonian-oak casks.
The vineyards of the Cavallotto family have three unique features: the 25 hectares of planted vines are a contiguous piece of land that encompasses the Bricco Boschis and Vignolo crus, they are all estate vineyards, and the land is worked according to an integrated farming concept that includes the use of organic farming practices. They have entirely eliminated the use of herbicides and pesticides, plant cover crops, and abolished tractor tilling, a practice that results in soil compaction. In addition to the innovative organic techniques described above, the Cavallotto family has adopted agronomic practices that further improve grape quality: high-density planting, guyot pruning with limited buds per vine, and since 1991, the use of green harvest.
In the winery, both young and aged wines cross paths, with each different vintage expressing its character in accordance with the various processes that the Cavallotto family has perfected to best display the unique microclimate of the Bricco Boschis. Steadfast devotion to tradition combined with a high regard and respect for modern viticultural and winemaking techniques result in complex and elegant Barolo that are released for sale only when they have acquired perfect maturity.
