Clement Lavallee Chablis Les Ardillers 2023

We love this wine because it so clearly shows the unique character of Chablis. Most importantly, high acidity is often mistaken for minerality. Here there is a fascinating texture that is a bit soft for chablis and makes it a transparent window the limestone soils to the wine. You almost taste the minerality of the ancient seas. 

45 year old vines. 50% is fermented in neutral barrel and 50% in stainless steel.
