This sparkling wine comes from the D.O.C.G. area of Conegliano-Valdobbiadene, a hilly region with morainic origins and calcareous soils mixed with loam and, in some areas, calcareous-clayey soils. Grapes are harvested in the second ten days of September, with yields limited to a maximum of 135 quintals per hectare.
Whole grapes are gently pressed using a pneumatic press, and the resulting must is settled in temperature-controlled tanks until it is used for sparkling wine production. The secondary fermentation takes place in vessels at a controlled temperature of 15–16°C using selected yeast cultures, then stopped by refrigeration once the desired alcohol and sugar levels are reached, followed by a short settling period before bottling.
The wine is 11% alcohol with 17 g/l residual sugar and 5.7 g/l acidity, and is best served at 6–8°C. It works especially well as an aperitif and pairs nicely with delicately seasoned fish and herb-based first courses.
