Vilmart & Cie Grand Cellier Brut

70% Chardonnay and 30% Pinot Noir. It's a very soft, almost fluffy & silky chardonnay. The vineyard is located on clay and limestone soils in Rilly-la-Montagne,  premier cru. The wine is fermented and aged in large wooden foudre and aged for 30 months on the lees. Surprisingly thiere is no malolactic fermentation.
