Perhaps more astonishing is that he's based in Marsannay. Today he farms 15 hectares from many tiny parcels of very old vine material, all organic and using biodynamic techniques. Aging takes between 15-18 months, but can be longer depending on the wine.\u003cbr\u003e\u003cbr\u003ePinot Noir planted 1950–1980 · blend of multiple terroirs across the village appellation · 30% whole-cluster, indigenous yeast; 18 months in older oak barrel.
