Perhaps more astonishing is that he's based in Marsannay. Today he farms 15 hectares from many tiny parcels of very old vine material, all organic and using biodynamic techniques. Aging takes between 15-18 months, but can be longer depending on the wine.\u003cbr\u003e\u003cbr\u003eIt's called a rosé, but this pretty darn dark. It is bled off and made from Pinot Noir with a small amount of an almost unheard of grape native to Burgundy called Pinot Beurot. The wine doesn't get a lot of skin contact, so it doesn't have the weight and tannin of a full blown red. But I \u003cem style=\"font-family: 'Helvetica Neue',Arial;\"\u003ewould\u003c\/em\u003e call this more a red wine than rosé.
