In Salvador's case, it happened during a visit to a butcher in Oaxaca City, where he was surprised to find African water buffalo among the selections. As it turns out, these animals had been raised in neighboring Tabasco for years, and Salvador saw an opportunity to try something a little different. Together with his nephew Lalo, a chef and mezcalero, and Maestro Mezcalero Flavio Pérez Méndez, they came up with a rather adventurous take on traditional Pechuga mezcal. The idea? Combine water buffalo with a colorful assortment of fruits, including tejocote, apple, orange, mandarin, mango, pineapple, guava, plantain, and star fruit, with plenty of citrus to keep things bright and lively.

Produced at Casa Palacios in Tlacolula de Matamoros, Oaxaca, this mezcal begins with 100% Espadín agave (Agave angustifolia), matured for eight years before harvesting. The agave is roasted in a traditional earthen pit using sustainably harvested Encino oak, crushed by a horse-drawn stone tahona, and fermented in wooden vats (tinas) using well water. Following the first distillation in a copper alembic pot still, things get particularly interesting. During the second distillation, water buffalo meat is suspended in a net inside the still while the fresh fruits are added directly to the mezcal. Bottled at a generous 50.4% ABV, the aromas are inviting, with tangerine, grapefruit, banana leaf, cooked agave, and a gentle touch of cinnamon. The palate delivers lovely minerality, rich cooked agave, and subtle citrus notes, all wrapped in an enveloping texture with a beautifully persistent finish.

What's particularly fascinating about this mezcal is how something so unconventional can taste so remarkably balanced. Despite the adventurous combination of ingredients, nothing feels out of place. The richness of the Pechuga distillation complements the brightness of the fruit without overshadowing the natural character of the Espadín. And while the water buffalo certainly makes for a great conversation starter, there's much more to appreciate here than just an unusual recipe. This is a beautifully crafted, expressive mezcal that offers a different perspective on what Pechuga can be. For those looking to explore beyond the familiar styles of mezcal, this is a wonderful discovery: complex, elegant, refreshingly vibrant, and, most importantly, absolutely delicious.

//cdn.shopify.com/s/files/1/0637/4064/1349/files/8a056697-4e72-4b80-a6b5-d71769bfbb04.png?v=1793557387
https://communitywineandspirits.com/products/salvadores-mezcal-destilado-con-bufalo-mezcal-artesanal-750ml
