Made by Maestro Mezcalero Onofre Ortíz Ortíz in the small village of Bramaderos, Oaxaca, this is a beautiful example of what a little extra patience can bring to the table. Onofre works with 100% Espadín agave, allowing the plants to mature for eight years before harvesting. He also uses a technique called capón, where the flowering stalk (quiote) is cut off, allowing the agave to spend several more months concentrating its sugars in the heart. Think of it as giving the agave a little extra time to get even more delicious!

For this particular batch, Onofre harvested 85 piñas, weighing a whopping 7,500 kilograms. After five days of resting, the agave is slowly roasted for three days in a traditional stone oven fueled by oak, then given another three days to rest. From there, everything is milled using a combination of axes, machetes, and a small mechanical grinder. The agave then spends five days fermenting naturally in cypress wood tanks with well water and wild yeast before being distilled twice in a copper pot still. It's a pretty involved process, but that's part of what makes this mezcal so interesting. The batch was produced in June 2023, yielding just 1,050 liters. Not exactly a large production, especially considering how much work goes into it!

Now, let's talk about how it tastes, because this is where things get really fun. At 48% ABV, this mezcal is rich, creamy, and surprisingly mellow, with a texture that almost reminds you of sweet cream. You'll find notes of milk chocolate, toasted hazelnuts, roasted carrots, and warm baking spices, along with some unexpected savory touches of clothbound cheddar and fresh tree bark. I know, cheddar in mezcal? But trust me, it works! There's a wonderful balance between the sweet, earthy, and savory flavors that makes every sip a little more interesting than the last.

Espadín sometimes gets overlooked in favor of more unusual agave varieties, but this bottle is a great reminder that it's not always about how rare the agave is. Sometimes it's simply about who's making the mezcal and how much care goes into it. And in Onofre's hands, Espadín is anything but ordinary. Rich, a little funky, wonderfully decadent, and absolutely worth exploring!

//cdn.shopify.com/s/files/1/0637/4064/1349/files/9e718c00-0021-4b3e-ae49-fccc6d24a2fb.png?v=1793492850
